Avocado Shrimp Boats – Quick and Easy!

I don’t know about you, but I can’t get enough of guacamole. I mean, seriously, it contains all of my favorite things… onion, lime, AVOCADO. I was making guac one night when I realized that the skin or “shell” of the avocado looked like little bowls after I had scooped out all of the insides. I decided to use these tiny bowls to serve my shrimp guacamole and voila, my Avocado Shrimp Boats were born. I hope you enjoy!

Avocado Shrimp Boats


1 cup shrimp, cooked and chopped

1 large avocado

½ red onion, medium diced

½ tomato, medium diced

¼ cup freshly squeezed lime juice

Dash of garlic powder and sea salt


  1. Cook and chop shrimp (I bought frozen, wild-caught & sustainable shrimp which I shelled and deveined. You can buy already cooked shrimp to save you this process).
  2. Cut avocado in half (the long way) and scoop out the insides into a large bowl. Mash the avocado until you get the consistency you like.
  3. Add onion, tomato, shrimp, lime juice, garlic powder and sea salt and mix well.
  4. Scoop mixture into avocado skin or “shell” and serve with a lime wedge.

So easy to make – fool proof!
